  3. Add grated ginger and slit green chilies. Sauté for a minute until fragrant.
  4. Add finely chopped onion and sauté until golden brown.
  5. Now, add the tomato puree. Cook for about 5-7 minutes, stirring occasionally, until the raw smell disappears.
  6. Add turmeric powder, red chili powder, and coriander powder. Mix well and cook for another 2-3 minutes.
  7. In a blender, grind the soaked cashew nuts into a smooth paste. Add this paste to the tomato-onion mixture. This is what gives the Shahi Paneer its signature richness and creaminess.
  8. Add garam masala and salt to taste. Mix well.
  9. Add the paneer cubes to the gravy. Gently stir to coat them evenly.
