Shahi Paneer Recipe
This recipe is a little more involved than some of my weeknight dinners, but trust me, the effort is absolutely worth it. - 2 tbsp Oil
- 1 tsp Cumin Seeds

- 1/4 cup Cashew Nuts, soaked in warm water for 30 minutes
- 1/4 cup Fresh Cream
- 2 tbsp Butter
- Salt to taste
- Fresh Coriander Leaves, for garnish
Instructions:
- First, let’s prepare the paneer. You can lightly fry the paneer cubes in a little oil until golden brown, or simply keep them fresh and soft. I prefer the latter for a more melt-in-your-mouth texture.
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Add grated ginger and slit green chilies. Sauté for a minute until fragrant.
- Add finely chopped onion and sauté until golden brown.
- Now, add the tomato puree. Cook for about 5-7 minutes, stirring occasionally, until the raw smell disappears.
- Add turmeric powder, red chili powder, and coriander powder. Mix well and cook for another 2-3 minutes.
- In a blender, grind the soaked cashew nuts into a smooth paste. Add this paste to the tomato-onion mixture. This is what gives the Shahi Paneer its signature richness and creaminess.
- Add garam masala and salt to taste. Mix well.
- Add the paneer cubes to the gravy. Gently stir to coat them evenly.
- Cover the pan and simmer for 5-7 minutes, allowing the paneer to absorb the flavors of the gravy.
- Stir in the fresh cream and butter. This adds another layer of richness and a beautiful glossy finish.
- Garnish with fresh coriander leaves.
- Serve hot with naan, roti, or rice. Enjoy!
