Chicken Congee Recipe

Ingredients:

* 1 cup long-grain rice * 8 cups chicken broth * 1 cup cooked chicken, shredded * 1 inch ginger, peeled and thinly sliced * 2 cloves garlic, minced * 2 scallions, thinly sliced (for garnish) * 1 tablespoon soy sauce * 1 teaspoon sesame oil * Salt and pepper to taste * Optional toppings: fried shallots, chopped cilantro, chili oil, preserved vegetables #### Instructions:

  1. First, we wash the rice. Rinse it very good under cold water until the water runs clear. This take away the extra starch, make the congee more… delicate.
  2. Next, in a big pot, we put the rice and chicken broth. Bring to boil, then turn down the heat to low, very low. We want it to simmer, not boil like angry dragon.
  3. Now, we add ginger and garlic. Ginger give warmth, garlic give little bit of… punch. We simmer this for at least 1 hour, maybe 1.5 hours. The rice will break down, make a thick, creamy soup. You must stir it often, so it doesn’t stick to the bottom and burn. Burning is bad luck, like stepping on crack in the sidewalk.
  4. After one hour, we add the shredded chicken. This is cooked chicken, remember? We don’t want to cook it too long, just warm it through. Then we add soy sauce and sesame oil. Soy sauce for salty flavor, sesame oil for… fragrant smell.
  5. Taste the congee. Add salt and pepper as needed. Maybe you like more salty, maybe less. It’s your congee, you are the master chef!
  6. Finally, we serve the congee hot. Garnish with scallions, maybe fried shallots if you have them. Cilantro, chili oil, preserved vegetables… whatever makes you happy. Congee is like blank canvas, you can paint it with your favorite flavors.

So, we watch movie, we eat congee. We think about the music, the love, the life. Maybe we learn something. Maybe we just feel a little bit better. That’s all we can ask for, right?
