Behold! The inspiration… or at least the reason why I’m making you pasta. Maybe after we eat, we can all sit around and mope in a dimly lit room while someone strums a melancholic tune. Just kidding! Unless…?
### Ingredients:
- 1 pound pasta (linguine, fettuccine, or spaghetti – whatever your heart desires!)
- 1 tablespoon olive oil
- 1 clove garlic, minced (or two… I’m not the boss of you)
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced bell peppers (any color, be dramatic!)
- 1 cup sliced zucchini
- 1/2 cup peas (fresh or frozen, nobody cares)
- 1/4 cup grated Parmesan cheese (the good stuff, obviously)
- Salt and pepper to taste (because bland is boring)
- Optional: A splash of white wine (for the chef… and maybe the pasta)
- Optional: Red pepper flakes (if you like a little kick in your existential crisis)
Instructions:
- Cook the pasta according to package directions. Remember to salt the water! Nobody likes bland pasta, not even struggling musicians. Reserve about 1 cup of pasta water before draining. That starchy goodness is liquid gold!
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Don’t burn it! Burnt garlic tastes like sadness.
- Add the broccoli, carrots, and bell peppers to the skillet. Cook for about 5 minutes, or until slightly tender. We want them to be a little bit crunchy, not mushy.
- Add the zucchini and peas to the skillet. Cook for another 3 minutes, or until everything is heated through. If things are looking a little dry, add a splash of that reserved pasta water. It’s magic!
- If you’re feeling fancy, deglaze the pan with a splash of white wine. Let it simmer for a minute or two, allowing the alcohol to evaporate. (Don’t worry, you can still have your own glass on the side.)
- Drain the pasta and add it to the skillet with the vegetables. Toss everything together until well combined. Add more pasta water if needed to create a nice sauce.
- Stir in the Parmesan cheese and season with salt and pepper to taste. If you’re feeling adventurous, add a pinch of red pepper flakes for a little heat.
- Serve immediately. Garnish with extra Parmesan cheese and a sprinkle of fresh herbs, if you’re feeling particularly sophisticated.
- Now, eat your pasta and contemplate the meaning of life. Or, you know, just enjoy a delicious and healthy meal. Whatever floats your boat.
