Okay, so I stumbled across this movie and I immediately wanted to share it with you. It’s a little gem, a real heart-warmer, and the music is absolutely stunning. Seriously, prepare to be humming the tunes for days after you watch it!

Guy, a street musician who repairs vacuum cleaners by day, meets Girl, a Czech immigrant who sells flowers and plays piano in a music shop. They connect through their shared love of music and begin to write and rehearse songs together, dreaming of recording a demo album.

Hearty Irish Stew (Because ‘Once’ Makes You Hungry for Comfort)

Ingredients:

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup Guinness (or other stout beer - optional, but highly recommended!)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme

  • 1 lb potatoes, peeled and cubed
  • 1 lb parsnips, peeled and cubed (optional, but adds a lovely sweetness)

Instructions:

  1. Sear the Beef: Season the beef cubes with salt and pepper. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. This step is crucial for developing rich flavor. Remove the beef and set aside.
  2. Sauté the Vegetables: Add the onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add the garlic and cook for another minute until fragrant.
  3. Build the Flavor: Stir in the tomato paste, thyme, and bay leaf. Cook for 1 minute, allowing the flavors to bloom.
  4. Deglaze and Simmer: Pour in the Guinness (if using) and scrape the bottom of the pot to loosen any browned bits. This will add even more depth to the stew. Add the beef broth and bring to a simmer.
  5. Combine and Simmer Again: Return the beef to the pot. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for at least 2 hours, or until the beef is very tender. The longer it simmers, the more flavorful it becomes!
  6. Add the Potatoes and Parsnips: Add the potatoes and parsnips (if using) to the pot. Cover and continue to simmer for another 30-45 minutes, or until the potatoes are tender.
  7. Adjust and Serve: Remove the bay leaf. Taste and adjust the seasoning with salt and pepper as needed. Garnish with fresh parsley before serving.
